Twice Cooked Wings
This has become my favorite wing recipe on the Big Green Egg.
Ingredients
Desired amount of chicken wings
Favorite Rub (I use Bone Suckin’ Sauce)
Favorite Sauce (I use Tabasco Chipotle Pepper Sauce)
Prep
Set up your Big Green Egg for indirect cooking at 350 (ºF)
Generously cover wings in your favorite rub
The Cook
When your BGE is up to temp, place your wings evenly on the grates
Cook for 22-25 minutes, or until your chicken reaches an internal temp of 165 (ºF)
The Finish
Remove the cooked wings from the grill grates
Toss them in your favorite sauce
Switch your Big Green Egg from indirect heat to direct heat
It’s easiest to do this if you have a PSWoo
Your Egg is going to jump in temp to around 450 to 500 (ºF) and that is just fine
Grill the wings about 2 minutes per side or until desired crispiness
